Portable Range Hoods for your Indoor BBQ: Are they Worth It?

When you live in an apartment, especially an HDB, you’ll want to try and minimise the amount of smoke and smells produced by your BBQ so as not to disturb the neighbours, and of course, not make your home smell like you lit a BBQ-scented candle. Yes, it’s definitely possible to have a BBQ in your HDB apartment, but doing so requires a bit of planning.

First of all, you’ll need a well-ventilated area like a balcony. Most of us who live in HDB flats don’t have the luxury of having a balcony, like those in maisonettes and DBSS apartments, but we can definitely make do with the service yard. Now, to properly do this, you’ll need to check with HDB on how you can cook in this space which is originally meant just for doing your laundry (check out this example). Some HDB homes don’t even have a division between the kitchen and the service yard, so in this case, you’ll have to check with HDB on where the service yard ends and the kitchen starts if there’s no clear boundary. 

Other things that help with keeping the neighbours from pulling out the pitchforks are if you’re on the highest floor, using electric grills, cooking on a griddle attachment, and even avoiding ingredients with more oil and marinades. Of course, not everyone can do all of the above, nor would you want to. So to help with this smoke issue, we decided to test out some portable range hoods!

Do portable range hoods really work and are they worth getting? We test out 2 different hoods from 2 different price points, ORIA (in the $20-$30 price range) and AMZChef (in the $180-$200 price range), so you don’t have to! Prices depend on where you get them from.

Let’s begin with ORIA because it was the first to arrive in the mail. This hood was very basic, with a filter that didn’t look like it would do much filtering – it had very big gaps between the pores so it’s very unlikely to trap grease, let alone odors. While the tripod stand it comes with is foldable and removable, which makes it convenient for storage, it also made it quite unstable when propping it up to stand on the side table of the BBQ. The good thing about it is that once it’s charged, it’s wireless so it really is portable. The hood itself is quite lightweight and compact, which at first seemed like a plus, but I soon realised this fact made the hood somewhat of a white elephant when it came to function.

Now onto the actual use of the product. Contrary to all the positive reviews on Lazada, which surprisingly, was all 16 of them at the time of writing this post (one of the reasons why I chose this brand), the ORIA hood was severely lacking in the one thing it was supposed to do, which is to pull smoke into it and trap grease and odors, and then release the clean air back out. Even at the highest speed (no. 3), it did nothing, or if it did, it was so weak that you wouldn’t be able to tell because the service yard still smelt very strongly of BBQ and smoke filled the whole area when it was being used. But at $20 and the fact that it was overly simplistic in design, I really shouldn’t have expected much from this product.

I’m not going to mention anything about the noise these hoods create in the post because I’m more interested in the actual function of them. Regardless, the permanent exhaust hood that sits over our kitchen stove is way noisier, so I don’t think these portable ones will disturb the neighbours as much as the smell of BBQ will.

Moving onto the AMZChef. Upon setting it up, I was already impressed by its robustness. It had more weight to it than the ORIA, a proper-looking filter and even an oil compartment for collecting grease. When I say a proper-looking filter, I mean it looks just like the filter inside my dog’s drinking fountain which is a sort of cotton wool-like material. My hopes were higher for this hood already.

The AMZChef also has 3 speeds, and I went straight to the highest speed because mamma ain’t taking chances on her apartment smelling like steak (as much as I love a good ol’ sirloin cooked in tallow). At the highest speed, the AMZChef actually did make the apartment less smokey and the smell of BBQ was definitely less strong. Usually, I’d be able to smell the BBQ in the living room, but this time, it stayed mostly in the service yard with a hint of it making its way into the kitchen if you stand near the sliding door. You could actually see smoke being sucked into it, though not all. Some of it still wafted around the hood.

When we took out the filter after use, you could see evidence of grease getting trapped in it. However, no oil had made its way into the oil collection area. Perhaps we’ll check back again on it after many more uses. But overall, I am quite satisfied with this product. Could it be better? For sure, it’s not as good as a permanent exhaust hood. However, it definitely helps with the smoke control, and its suction is powerful enough to make a difference.

So, the question is, are portable range hoods worth getting if you’re going to BBQ in your HDB apartment or any apartment that doesn’t have a balcony for that matter? I would say yes, but I would be wary of the ones that are too cheap. If the price looks too good to be true, it probably is. Widen your budget and get one that actually works.

This means you might be spending an hour getting the fire going and starting to cook only at 8 pm, and you only have 3 hours to enjoy the party.

Host the Perfect BBQ in Singapore Without Breaking the Rules

HDB apartments are where most Singaporeans live – almost 80%! For landed property dwellers, the garden or the backyard is the obvious choice for the placement of the BBQ, whereas condo dwellers have to check with their management first if they can use their BBQ on their balcony.

What about those who live in HDB apartments? Most HDB apartments don’t have balconies or terraces. The closest thing to a balcony we have is a service yard.
Where You Can (and Can’t) Place a BBQ in Your HDB

First of all, am I even allowed to put a BBQ in my HDB apartment? The answer is yes – but to legally have one in your home, you’ll need to do it within HDB’s guidelines.

When we asked HDB if it was possible to have the BBQ in the service yard, their reply was this:

“According to our regulations, cooking activities should be confined to the original kitchen floor area, and cooking activities within the service balcony are not allowed.”

Since most service yards are next to the kitchen, you could bring the door and wall that divides the yard and kitchen deeper into the kitchen, making the service yard a larger area. In doing so, part of your kitchen now becomes your service yard. However, according to the original floor plan (and this is what matters), part of the service yard is still considered the kitchen. This is where your BBQ has to go.

For reference, here was HDB’s response to us: “We wish to clarify that cooking of any kind is allowed within the original kitchen area as per the original floor plan.
If the wall/door between the service yard and the kitchen has been removed, the layout of the flat is based on the original floor plan. Therefore, you may use a BBQ or conduct any cooking activities in the area that was originally designated as the kitchen.

However, cooking activities are not permitted in the area that was originally designated as the service yard, even if the kitchen extended into the service yard.”

Managing Smoke & Smell Considerations

You’re probably wondering—okay, now that I’ve gotten the legalities out of the way, what about my neighbours complaining about the smoke?

We have a few suggestions:

  • Avoid using  charcoal, smoker boxes, wood chips or wood chunks. Use a gas or electric BBQ grill instead. Charcoal and other fuels, even those that supposedly create less smoke, will still create enough smoke to bother your neighbours. Remember, the service yards are lined up above each other, and that’s where most people do their laundry.
  • If possible, get the top floor of your building. If you’re getting a resale flat, try to get the highest floor of the building. Smoke travels upwards, and being on the top floor means not having a neighbour above you to complain about it.
  • Get a portable (or two!) exhaust hood. While this won’t really work with charcoal grills, as the smoke can be really overwhelming, it will help with your gas or electric grill.
  • Avoid sugary marinades if possible. This can cause flare-ups when the marinade and oils drip onto the fire, even with your gas grills. Flare-ups can be pretty smoky.
  • We also recommend shutting the front door if your neighbours are drying the laundry in the corridor. Instead, open the window in the living room and allow for airflow between this window and the service yard. If you notice that the air is flowing out the service yard and not out the window in your living room, that’s even better! It means the smoke and smells from the BBQ are less likely to enter into the main area of your home.

How to Choose A BBQ Grill In Singapore

When shopping for a BBQ grill in Singapore, consider the following factors to ensure you are getting something that makes sense for your situation:

  • Compact & Space-Smart Design – HDB kitchens and service yards have limited space, so choose a slim, lightweight grill that won’t crowd your counters or storage. Features like foldable legs, detachable stands, and built-in wheels make it easier to move your grill and store it away when not in use.
  • Low-Smoke Performance – In communal living, smoke control is essential. Look for enclosed heating elements, grease management systems, and lids that help trap heat and reduce smoke.
  • Effortless Cleaning – Removable drip trays, dishwasher-safe grates, and non-stick cooking surfaces save time and make it easier to store your grill quickly after use.
  • Built-In Safety Features – Cool-touch handles, automatic shut-off timers, and thermal cut-off protection reduce risk in kitchens where the grill may be close to walls, windows, or other appliances.

Here are some of our personal recommendations for grills:

Currently, I am using the smallest 2-burner Napoleon grill available in my HDB apartment (more on this in future posts). There is also an electric version, but I personally still prefer an open fire grill. I got it with the stand option because you can hide the LPG tank behind it. See it in action:

If you have more space, I recommend any of the Napoleon Freestyle BBQs. The Freestyle 365 in particular is the smallest 3-burner grill you can get from this range, and the one without the side burner option comes with 2 collapsible side tables, making it even more compact and perfect for storage after use. There are also regular side burners and infrared side burner options for those who want these additional features.

Roasted Garlic Salsa & Tacos

I’m whipping up some beef tacos with a roasted garlic salsa on the Napoleon P500RSIB Phantom for my best friend, Bert (who made a cameo at the end – he said it was amazing – no lie!). 

Here’s the recipe –
Ingredients for beef taco filling:
500g ground beef
30g taco seasoning (I am using a homemade seasoning but you can also use storebought)
¾ cup water

Tools needed:
Cast Iron Skillet
Spatula

Steps:
1. Pre-heat skillet on side burner of grill.
2. Add ground beef and allow it to brown.
3. Add water and taco seasoning, and allow to boil for about 5 minutes before taking it off the heat.

Ingredients for Roasted Garlic Salsa
Oil for coating the veggies
4-5 large Tomatoes or 8-10 small ones (Use roma tomatoes if you have them, I’m using Heirloom because I wasn’t able to get Roma)
2 small bulbs of garlic
1 onion
1 green chili (take out the seeds if you don’t want it to be too spicy – I’m using a local green chili, but you can use jalapenos if you like)
A bunch of cilantro leaves
1 lime
1.5 teaspoon of Salt
Pepper (3 pinches)

Tools needed:
Smoker box
Wood chips (we’re using cherry wood chips, but you can use any fruity wood chips to go with the veggies)
Grilling basket
Tongs

Steps:
1. Put a smoker box with wood chips over the burner.
2. Fire up the grill till it gets hot.
3. In the meantime, coat veggies (except coriander and lime) with olive oil and place them in the grilling basket.
4. Once the grill is hot, turn the heat down to medium and place the grilling basket on the cooking grids.
5. Cook for about 6-8 minutes before flipping over with your tongs to cook for another 6-8 minutes on the other side.
6. Once veggies have been cooked, take them off and place them in the blender. Make sure to peel the garlic before placing them in the blender. You may also peel the tomatoes if you prefer them this way.
7. Add juice of 1 lime, coriander, salt and pepper to blender.
8. Blend until well mixed.
9. Add more salt if preferred.
10. Serve sauce with tacos (taco shells, taco meat, and assortment of preferred ingredients such as shredded cabbage, sour cream, and cheese)

Want your grill to last a long time? Follow these tips on how to clean and maintainer your barbecue grill.

DON’T: Cover your grill with aluminium foil. We’ve seen this done in many ways – from users lining their cooking grids, entire fire box to their side tables – but by far the most common would be the drip tray. When you do this, 2 things can happen – you’re grill can overheat because there’s all this additional metal and sometimes even blocks airflow. It can also be the cause of grease fires when grease gets trapped between the creases of the foil. If you own a Napoleon BBQ, this can even void the warranty the grill comes with.
DO: Use drip tray and grease tray liners to keep your BBQ clean, instead of aluminium foil. These don’t have creases and you won’t sabotage the warranty on the grill. If you have a Napoleon Grill, these liners will come in specific sizes for the different grill models available.
DON’T: Forget to cover your BBQ with a grill cover, especially if you’re storing your grill outdoors without any shelter. Excessive rain can cause your grill to corrode over time. Remember, stainless steel means that it is rust resistant, not rust proof. Renove the cover once in a while to wipe down the grill, as moisture may collect underneath the cover, especially in Singapore’s humidity.
DO: Do use a brass-bristle brush to clean your cast iron cooking grids, and a stainless steel-bristle brush to clean stainless steel cooking grids.
DON’T: Ever hose down your bbq grill with water. Just like how you would cover your grill to protect it from rain, do not intentionally spray your grill with water either. 
DO: Coat your cooking grids with cooking oil (or rust defender) after cleaning them to protect them from rusting.

The term “Wine Chiller” seems pretty self-explanatory. A chiller for wine, right? Sounds simple enough, but did you know that different wines need to be chilled at different temperatures? You might even have heard that red wines can be left at room temperature – but what really is room temperature? In Singapore’s constant 30 plus degrees celsius heat, room temperature isn’t exactly ideal for any kind of wine.

What temperatures do different wines need to be chilled at?
White Wines can be broken down into two types: Lighter-bodied and fuller-bodied.

With lighter-bodied white wines that are aromatic and acidic like Pinot Grigio, Muscat and Sauvignon Blanc, an ideal temperature for serving them would be between 7°C to 10°C. Likewise, Rosé wines should also be served at this temperature to bring out their fruity and refreshing notes. Meanwhile, fuller-bodied white wines that are oaky like Sémillon and Chardonnays should be served somewhere between 10°C to 13°C.

Sparkling wines, on the other hand, should be served at an even lower temperature – from 4°C to 10°C. This will help keep the bottle from accidentally popping open from the build up of carbon dioxide. 

Lighter-bodied red wines should be served at a slightly colder temperature than fuller-bodied white wines, at 13°C to 16°C. This would include St. Laurent, Pinotage and some lighter-bodied pinot noir.

Now, when we talk about wines that should be served at room temperature, we don’t mean Singapore’s version of room temperature. We’re looking at keeping reds like your Merlot, Shiraz and Malbec between 16°C to 18°C.


Why use a wine chiller instead of a fridge?
You’re probably wondering, if I have a fridge, why would I need a wine chiller?

If you’re particular about flavour, then you’ll probably notice that the flavour of wines which are colder than the recommended temperature will be toned down. Having a wine chiller not only helps keep the wine cool for that refreshing taste, but also prevents it from being too cold, so that you get the best experience out of your wine.

What makes a good wine chiller?
Whether you’re starting your personal wine collection, or expanding one that you have had for a while, a wine chiller is a must-have if you are making wine a part of our lifestyle. Knowing what to look out for in a good wine chiller will definitely enhance the wine-tasting experience.

Some of the key features to look out for in a wine chiller are precise temperature control in different zones, a compressor from a reputable brand, and UV-protected and thicker-layered glass doors.

Are you a barbecue lover? Steak aficionado? Already got yourself a grill but looking to level up your meat game? Why not give dry-ageing a go?

Dry-ageing might sound intimidating to some, but it’s really a simple process. While it’s uncomplicated, it does take some patience because you can’t have your steak immediately. Dry-ageing takes some planning – way in advance.

What is dry-ageing and how does it work?

You might have heard of the term “dry-ageing” or “meat-ageing” thrown around in conversations or in passing, especially if you run in circles of meat and grilling enthusiasts.

But what exactly does it mean?

Dry-ageing is a process where meat is aged in a controlled, open air environment, like a refrigerated room or appliance (like our meat ager!) for an extended period of time. The humidity, temperature, and air circulation of the room or appliance is controlled in order to keep the meat from going bad, while helping it to age well. This process is usually done with beef, but you can do it with other meats too, and even cheese, if you like.

When the meat is left in the meat ager for long enough, it will allow natural enzymes to break down muscle tissue, and in the process, lose moisture as well, making it more tender.

Why dry-age your meat at all?

There are two important things that dry-ageing does to your meat. It enhances the flavour and makes it more tender. How? As mentioned earlier, when you leave your meat in a meat ager, it allows natural enzymes to break down muscle fibres and connective tissues, making the meat more tender and easier to chew and digest. During this process, the meat is exposed to air and also loses moisture through evaporation, and this creates a richer and more intense concentration of the natural flavour in the meat.

There is also something known as the “dry-aged” flavour, which some might describe as nutty, beefy, earthy or even like cheese. When flavour compounds, like amino acids and sugars, come together during the breakdown of fats and proteins, you get this rich and interesting flavour.

 

How long should you dry age your meat for?

This really depends on the intensity of flavour and tenderness you would like your dry-aged meat to have. The longer it takes (could be a few weeks to a few months), the more flavourful and tender your meat will get. Fret not – even though you’re not cooking the meat straight away, the cold temperature, controlled humidity and airflow, help to keep the meat from developing bacteria, so it’s safe to eat even after being “exposed” for such a long time.

Is there anything I need to do to my meat before placing it in the dry-ager?

The first step is choosing a fresh cut or cuts of meat with a good amount of marbling and fat cover. This could be anything from ribeye, T-bone, picanha (rumpcap) or tomahawk steak. Some recipes might call for salting your meat a fair bit before dry ageing it. Make sure the meat is of a substantial size because the meat will lose moisture and shrink a little and you’ll also have to cut off the crust as it gets quite hard.

Set the temperature of your meat ager to between 0°C and 4°C (32°F and 39°F), with a humidity level of 80-85% and making sure there is proper airflow in the appliance. You can choose to either hang the meat on the hooks provided with the meat ager, or simply place it on one of the shelves. It is recommended to leave the meat in the ager for about 3 weeks to 1.5 months. Once the wait is over, it’s time to cook.

Is there a special way to cook a dry-aged steak?

You’ve prepped the meat and waited weeks for the day to finally cook it so you’d want to do it perfectly. Here’s how:

Take your steak out of the meat ager and let it thaw at room temperature. Then, pat it dry with a paper towel. Coat the steak with a little oil so that when you add salt and pepper over it, they’ll adhere well. Be generous with your seasoning. Before cooking, rest the steak for half an hour at room temperature.

 To sear the steak, we recommend using a grill. It’s ideal if you have a charcoal grill  because charcoal runs really hot and the smokey flavour that comes from using charcoal can’t be beat. Otherwise, a barbecue with an infrared burner works too (in fact, this is probably more convenient).

 



If you’re using a charcoal barbecue, you can lower the heat by making the vent holes smaller so that the fire dies down a little. During this time, you can begin the reverse sear. Grill your steak to your preferred doneness. Use a thermometer to check the inside temperature of your meat.

Remove at 50ºc for rare, 55ºc for medium rare, 60ºc for medium, 65ºc for medium-well and 70+ºc for well done. Let it rest for about 10 minutes. While resting, turn up the heat by opening your vents to allow more air into the grill and feed the fire. Put the steak back onto the grill and sear for about 45 seconds on each side. Remove and enjoy with a nice pairing of wine (more on this in our next article).

If you’re using a gas grill with an infrared burner, the process is basically the same. Grill to your desired doneness on the main grilling area, then finish it off by searing on the infrared burner. Et voila! A perfectly grilled, dry-aged steak.

Shopping for BBQ Display Units Online

Looking for a bargain when it comes to getting a new BBQ? Why not consider a display unit?

Display units are barbecues that have never been used before, but have been on display at a store before being returned to the warehouse. We usually sell these at discounted prices at our warehouse sale, but if you’ve missed our warehouse sale, no sweat! You can still get them at our store online!

The usual reasons for the BBQs being returned can be because a dealer has decided to change the display unit to a different bbq at their store, or the store might have downsized or closed its doors. Sometimes, the store might feel that the display unit has been on the floor for too long, and they want a newer unit for display purposes because their current unit has aesthetic defects from being handled too often. Whatever the reason, the display unit will function just as well as a brand new unit would.

The BBQ Grill Store has a section dedicated to shopping for display units online – here are some tips on what to look out for:
1. Not for the Fussy Buyer
If you know you’re particular, especially about the way a product looks, then getting a display unit might not be for you. These BBQs may not have any functional issues, but they will most likely have aesthetic defects. These defects can range anywhere for small dents to large scratches. Scroll through the pictures on the product page to see the condition of the BBQ – but remember, the camera cannot capture all the defects so if you want a closer look, arrange for an appointment to visit the showroom. Having said that, if you’re not a fussy buyer, then these BBQs can be a real steal because everything works fine and they’re still covered under the same warranty as a new BBQ would be.

2. Items Sold Separately
While all gas BBQs sold on The BBQ Grill Store will come with a gas hose and regulator suitable for a 12.7kg Esso or 9kg Sun Gas LPG Tank, it’s not necessarily so that they will all come with covers and other accessories such as griddles and rotisseries. Always check the specifications section to see what the BBQ comes with. Usually, if these items are not sold with the BBQ, you can put them in your cart by selecting them on the same page as the BBQ you’re looking to get.

3. No Assembly Required
The good thing about a display unit is that they come already  assembled. There’s usually an assembly fee for our smaller BBQs such as the kettles or the TravelQ series. However, you can skip this fee for a display unit since they were already assembled for the store they were at before.

4. Disclaimer Alert
It’s important to read all disclaimers beforehand. Sometimes a bbq might require special care. For example, the Napoleon PRO285E is an electric BBQ that needs to be plugged directly into a wall socket. Due to it’s high power usage, it cannot be used with an extension cord or this might cause the thermostat to fail.

When you live in Singapore, the stress of city life is almost inevitable. But we managed to book a getaway on Lazarus Island that transported us to a serene and picturesque place away from the hustle and bustle of day-to-day life in the city.

Lazarus Island’s Tiny Away houses definitely offered a change in scenery to the usual hotels you’d find on the mainland. Not only that, but we’d actually camped on Lazarus Island before, so the Tiny House experience was a convenient upgrade to the tents we had set up on our previous stay.

Our three favourite things about the Tiny Away staycation was that we could bring our own BBQ Grill, it was dog-friendly, and there were toilets and showers in the houses. Yes, the last point was a huge plus for us because our previous campsite was not anywhere near toilet facilities, and also did not have hot water.

We came prepared  – armed with our trusty Napoleon NK14 portable charcoal grill, best friends (and beers!) – we were ready to spend the day grilling by the clear waters of Lazarus Island.

Check-in for the Tiny Houses started at 3pm, so we got the fire going on our grill as soon as we settled in. We planned on munching our way through the late afternoon and evening. On the menu, we had our favourite cut of meat, the picanha (rump cap), which we ordered from Eater’s Market.

As picanha enthusiasts, we’ve found that so far Eater’s Market offers the best rump cap around, especially for the price. You can order it directly from them or get it on Fairprice online. We also grilled some Niman Ranch kielbasa sausages from Redmart, and Chicken hearts from Sheng Siong.

Marination was easy for the picanha, as we did it Brazilian style, with just a generous coating of rock salt. For the chicken hearts, we let them sit in beer, salt and minced garlic for an hour before slotting them onto our Napoleon skewers. All our meats were served with a side of farofa (toasted cassava flour).

Of course, we didn’t forget our carbs. We pre-cooked olive fried rice for our side dish with AAA’s preserved olives at home before our Tiny Away stay. This dish is always a winner with our friends and family.

Clean-up the next day was a breeze as the ash and charcoal had cooled down and we could dispose of them in the large bins provided by the Tiny Away “campsite”. Overall, the experience was an unforgettable one, as we were able to bring our own BBQ to grill our favourite dishes to share with our friends, and we were able to have a true dog-friendly staycation experience with our Doggo!
