Today, Hilary is going to share with us how to make Kashmir-style Lamb Curry with her  Napoleon grill!

Here are the ingredients:
Lamb Skewers

* 2 lb. (1 kg) boneless lamb, cut into 1.5-inch (3.8 cm) cubes

* 1 cup (245 g) natural yogurt

* 1 tbsp. (8.6 g) spice from Rogan Josh

* Salt and pepper to taste

* Napoleon Skewers

* Cooked basmati rice for serving

* Fresh mint or cilantro for garnish

 

Rogan Josh

* 2 tbsp. (18 g) garlic paste

* 3 shallots, roughly chopped

* 1 tbsp. (7.8 g) ground fennel

* 1 tbsp. (7.8 g) ground ginger

* 1 tsp. (2.6 g) ground turmeric

* 6 tbsp. (46.8 g) chili powder

* 5 tbsp. (74 ml) oil

* 1 cinnamon stick

* 3 to 4 cloves

* 5 green cardamom pods

* 2 cups (490 g) natural yogurt, room temp

* 2 cups (473 ml) chicken stock

Steps:

  1. In a bowl, combine the spices, fennel, ginger, turmeric and chili powder. Remove one tablespoon of the mixture for the lamb marinade. Combine the one tablespoon of spice, salt and pepper to taste with the natural yogurt. Toss the lamb in the yogurt and refrigerate overnight. 
  2. When ready to cook, combine the remaining dried spice mix with enough water to make a paste. 
  3. In a small saucepan add the oil and allow the cinnamon, cloves and green cardamom to bloom for a minute or two in warm oil, before straining the oil into a deep sided, heat safe, pan. Tie the bloomed spices into a sachet.
  4. Fry the shallots until tender. Add the spice paste and sachet of bloomed spices. Fry them together until fragrant and the spice paste will have turned a deep brick red. Add the garlic paste.
  5. Stir in the yogurt and cook for about 5 to 10 minutes over medium-low heat. Then add chicken stock to a gentle simmer for reduction.  This can be done over the side burner. 
  6. While the Rogan Josh is simmering, skewer the meat. When the Rogan Josh is nearly done, grill the lamb skewers over direct heat until sear marks form, then move them to indirect heat until a temperature of 120°F (49°C) for medium-rare, and 145°F (63°C) for medium-well. 
  7. Alternatively, you can sear the meat early and simmer it in the Rogan Josh and serve.

Smoking with BBQ Grills

Smoking is a time-honoured cooking method that involves exposing food to flavorful smoke from burning wood chips or pellets. The smoke infuses the food with a distinct smoky aroma and taste, enhancing its flavour profile. Additionally, the slow cooking process of smoking helps to tenderise tougher cuts of meat, resulting in incredibly juicy and melt-in-your-mouth textures. However, not everyone owns a smoker. Luckily, you can actually use your BBQ grill to smoke your meats and make some of the best BBQ in Singapore using some of these techniques! Let’s take a look at how. 

Types of BBQ Grills and How to Use them to Smoke

The purpose of smoking is to expose the food to flavourful smoke rather than intense heat. As such, food is cooked indirectly, away from the direct heat source. The heat should ideally be generated separately, in a separate chamber. The smoke is created from burning wood chips, chunks or pellets, which envelops the food, imparting its characteristic flavours. The food cooks slowly over an extended period, allowing the smoke to penetrate and enhance its taste. 

When it comes to using a BBQ grill for smoking, it is important to know how exactly you can smoke your meats in the most effective and authentic way.  Let’s take a look at the different types of grills that we can use for smoking. 

Charcoal Grills

Charcoal grills are often favoured by smoking enthusiasts for their ability to impart that authentic smoky flavour. If you own a charcoal BBQ in Singapore, you can definitely use it as a smoker by setting up a two-zone fire by placing the charcoal on one side and leaving the other side empty, as this arrangement allows for indirect heat cooking, ideal for smoking. Then, by adding soaked wood chips or chunks to the charcoal, you can generate flavorful smoke.

If your charcoal BBQ is a standard 22-inch kettle, then you could even use Napoleon’s diffuser attachment to turn it into a smoker with ease. The diffuser plate and ring allow you to do indirect cooking – it simply sits on top of your charcoal grate and underneath your cooking grill to absorb the direct heat arising from the charcoal and aids in spreading it throughout the kettle for better overall consistent cooking temperatures. 

Gas Grills

While primarily designed for direct heat grilling, most gas grills also offer the option to smoke as well. With multiple burners that can be adjusted independently, you can create a two-zone cooking setup for smoking. Some gas grills like the Napoleon Prestige PRO 665 and 825 even feature built-in smoker boxes or dedicated compartments where you can add wood chips or pellets to generate smoke. However, they may not offer the same depth of smoky flavour as using a charcoal BBQ in Singapore

Electric Grills

Finally, while not commonly used, electric grills can be turned into a smoker. We’re not talking about electric smokers or pellet grills that are more dedicated to using wood as fuel. We’re talking about using a regular electric grill, like the Napoleon Pro285e. You don’t actually need fire to light the smoke of an electric grill. All you need really, is a high-temperature heat source, like the burner of an electric grill, to light the wood chips. The wood chips could be in an aluminium pocket or a smoker box, sitting just above the burner, for the wood to start smoking.

However, it is not likely that you will use an electric grill to smoke, as many people who choose the electric option do so because they might have restrictions in the building they live in about using gas or charcoal grills. Also, it is more efficient to use an electric smoker or pellet grills for smoking.  

Tips for Smoking with BBQ Grills

Select the Right Wood Chips for Smoking

The choice of wood chips plays a crucial role in determining the flavour profile of your smoked food. Different types of wood, such as hickory, mesquite, applewood, or cherry, impart distinct flavours. Experiment with various wood chip combinations to find your preferred taste. You can also soak your wood chips in water for about 30 minutes before you use them, as this prolongs their smoking time and prevents them from burning too quickly. 

Controlling the Temperature and Airflow

Temperature control is essential for successful smoking. For charcoal grills, adjust the airflow by opening or closing the vents to regulate the heat. For gas and electric grills, adjust the burner knobs to control the temperature. The temperature range for smoking typically falls between 107°C and 135°C. If you are new to the process, you should use a thermometer to monitor the grill’s internal temperature and ensure it remains consistent throughout the smoking process.

Monitoring and Maintaining Smoke Levels

Maintaining a steady flow of smoke is crucial for flavour infusion. Add soaked wood chips or chunks to the charcoal in a charcoal grill or place them in a smoker box or aluminium foil pouch on a gas grill. Replace the wood chips when needed to ensure a consistent smoke supply. Avoid excessive smoke, as it can result in bitter flavours. Thin, wispy smoke is ideal. So take care not to dump half a bag of wood chips in your grill, as this can definitely result in some over-smoked meats. 

Choosing the Right Cuts of Meat for Smoking

Selecting the right cuts of meat is essential for achieving tender and flavorful results. Fattier cuts, such as pork shoulder, ribs, or brisket, are well-suited for smoking due to their higher fat content. The slow cooking process will render the fat, resulting in moist and succulent meat. Leaner cuts, such as chicken breasts or turkey breast, can be smoked too, but require careful monitoring to prevent drying out.

Understanding Cooking Times and Techniques

Each type of meat and ingredient has specific cooking times and techniques for smoking. Always research and follow recipes or guides to ensure optimal results. Generally, low and slow cooking is the key to tenderise tough cuts of meat. Plan for longer cooking times, as smoking can take several hours or even overnight, depending on the size and thickness of the food being smoked.

However, if you’re looking to continuously improve your grilling skills and impress your guests with some of the tastiest meals, you are going to want to consider the following tips and tricks to ensure that you offer a flavourful experience. This can help ensure that all your guests leave your party wanting to come back for more.

1. Invest in a good quality grill

But safety aside, it is important to know that the state of your grill can also greatly affect the taste of your food. Moreover, the cleaning tools you use also matter. Low-quality stainless steel or brass wire brushes can leave behind small bristles that get stuck on your grill and end up in your food. The Guinness Great Grill Out BBQ event returned to our shores after a two-year hiatus. On the 5th and 6th of November, local barbecue joints, smokehouses, and grill experts came together to present us with the biggest grilling festival of the year! And what pairs better with grilled food than an ice cold beer – a Guinness to be specific!

Multiple Masterchefs were invited to the event providing free classes. Renowned names such as Dave Pynt (Head Chef of Burntends) and Andrew Walsh (Newly minted MICHELIN-Starred) were among the guest list. Here are Desmond’s top tips for cooking steak from his class:

  1. Season your steak with salt and pepper before cooking. This helps to flavour the meat and also helps to create a nice crust on the outside of the steak.
  2. Preheat your grill before cooking the steak. This ensures that the steak cooks evenly on both sides.
  3. When cooking the steak, use direct heat for searing and then indirect heat for finishing. This prevents the steak from burning on the outside while still cooking it through to the desired doneness on the inside.
  4. Use a meat thermometer to check the internal temperature of the steak as it cooks. This enables you to know when the steak is cooked to your liking.

If you’re about to move into a new home, or in the process of looking for one, and the sight of a small terrace or balcony bothers you because you have no idea what to do with it, then consider turning it into a second kitchen with an outdoor BBQ grill.

Lots of new apartments are tiny in Singapore, and the kitchens are built in the open concept fashion to save on space. This means heavy cooking can lead to unwanted, leftover smells that permeate into the living areas. If you’re not a fan of this, then it’s time to take it outside! Yes, set up your own outdoor kitchen (or wet kitchen) by simply adding in an outdoor BBQ grill to your balcony (or planter).

There are so many functions to the BBQ. Get one with a hood and you’re looking at your very own oven and pizza maker. Need a stove? Most gas BBQs come with a side burner (and some even have infrared side burners!) that work as a regular gas stove.

Add on a rotisserie to slow cook a perfectly roasted chicken, or put in a reversible griddle to whip up large batch pancakes for the whole family. No shelter, no problem

Outdoor BBQ Grills are meant to be used outside, so there isn’t any concern about our local rainy weather. Our tip? Get a breathable PVC or canvas BBQ Grill cover. If the BBQ isn’t being used, keep the cover on and only take it off if when you’re going to use it. You’re also going to want to remove the cover every now and then to wipe it down, as Singapore is quite humid and droplets of water may sometimes form on the surfaces of the BBQ. When it starts to rain while you’re still using it, do not put the cover on immediately as the grill is still hot and can cause the cover to melt and stick to it.

Make it yours

If you’d like to take the outdoor kitchen concept one step further, then you may want to consider a built-in grill. Having a built-in grill means that you can play around with a custom counter with your favourite colour scheme, additional storage spaces, built-in trash bin and washing area for dirty dishes. Some easy-to-install bbq designs would be the Masport Ambassador built-in, and more complicated designs with electrical requirements for their fancier functions like bezel and hood lighting would be Napoleon’s Prestige PRO and BIG series.

If you’re looking to get a quality barbecue grill without breaking the bank, then here are some tips and tricks on how to score one. From past season models at BBQ warehouse sales, to secondhand grills from online marketplaces, there are great deals everywhere – you just need to know where to find them!

Holiday Store Promotions

It’s not uncommon for BBQ shops to hold in-store promotions from time-to-time, and usually during a holidays. For example, this National Day period (up till 31 August 2022), you can save $57 with any purchase of a BBQ above $1000 at our stockist, Fyregrill. To keep in the loop about sales like these, subscribe to newsletters from a few different online stores as this will let you know about future sales as well as BBQ events hosted by them.

BBQ Warehouse Sales

Another place you can pick up a sweet deal from is at a BBQ Warehouse Sale. These don’t happen as often as in-store holiday promos, but the discounts are usually much bigger as you can find past season grills or grills with aesthetic imperfections in the mix. Discount generally from 20% to 50% off, though there have been a select few models that have gone for 60% to 70% off. Even with the discount, you usually still get some warranty on the BBQ.

Look out for sales like these in the month of December, just before Christmas, especially if you’re picking out the perfect gift for dear ol’ Dad. Besides grills, you can also find past season grill accessories at these BBQ Warehouse Sales as well – but these get snapped up very quickly, so it’s best to go as early as possible!

Online Sale Sections

If you’re doing a Google search for a new BBQ Grill, a couple of online stores selling grills may come up. While browsing through these sites, look out for any sections that indicate “SALE”. You may be able to pick up some steals from this section. But in our experience, any popular BBQs that pop up in this section sell out quite quickly, leaving the less popular ones as well as accessories behind – so you really have to be on the lookout for updates quite frequently.

Get It Secondhand

If you don’t mind getting a used grill, then buying it secondhand might be the choice for you. Places like Carousell and Facebook Marketplace are some examples of where you can get one. Some of these grills may need some cleaning up or even replacement parts, but you can usually find services like that for a fee from local grill distributors. The downside to this is, the BBQs usually don’t have any more warranty left on them, so you have to make sure to check the BBQ for any broken parts. Try getting a BBQ with a brand distributor in Singapore as you can usually buy spare parts from them, regardless of whether the grill is still under warranty. And lastly, you should check out the BBQ in person and ask the seller to hook it up to the gas tank for you to test it out on the spot before buying it.

Know your power source

As the name suggests, the obvious power source of an electric BBQ grill is electricity. 2022 already started out right for us BBQ lovers because Napoleon just launched a range of impressive accessories to enhance your grilling experience. There are quite a few nifty BBQ gadgets that we’d like to highlight for their versatility and/or practicality, so let’s get started!

Round and Round We Go
The Prestige and Prestige Pro series have always had rotisseries packaged together, whereas with the Rogue, Legend and now Freestyle series give grill owners the option of purchasing it separately. Either way, as an owner of a full-sized Napoleon gas grill, you’ve always had the option of using the rotisserie regardless. However, this has never been the case for Napoleon’s smallest gas grills (the TravelQ series) or their charcoal kettles… sorry, not sorry! Because that isn’t the case anymore!

Napoleon has not only come up with rotisseries for their TravelQ series and 22” charcoal kettle grills, these rotisserie attachments also feature a pizza oven as part of the deal. Not only are these accessories versatile, they are also easy to set up (perhaps with the exception of attaching it to the PRO22 charcoal kettle series as you will have to unscrew a few bits and pieces of the BBQ and reattach the hinged lid).

A Smokin’ Addition
If you’re an avid griller (especially using charcoal), but once in a while you do like to dabble in a bit of wood smoking, then Napoleon’s diffuser plate might be the perfect addition to add to your grilling tools. Without having to purchase a whole separate smoker which can take up a bit of space (and in Singapore, let’s be real, real estate is premium), the diffuser plate allows you to convert your 22” charcoal kettle into a smoker, and without having to do much either. You won’t need your toolbox to set this system up. Then it’s just a matter of throwing in your favourite charcoal and wood chunks and voila!

IMO using our grills to whip up breakfast is way too underrated. There’s so much emphasis on steaks, hotdogs and burgers – not exactly breakfast foods, for most anyway – that we forget about breakfast foods (notice how I say breakfast foods and not just breakfast? Who says you can only have bacon and eggs in the morning?).

But I love bacon on my griddle. Sure, the air fryer has been convenient with the bacon for a while, but the griddle gives me the option of flipping pancakes at the same time because of how spacious the grill is. And the best part is how crispy and unbelievable the flavor of the bacon is when done on the griddle. And now, with Napoleon’s breakfast toolset, sunny side eggs just got a little more perfect. Just imagine cooking up some hash in leftover bacon grease with your new spatula…ooooh boy. Needless to say, this toolset works best if you have a griddle on hand.

Always Use Protection
Yep, you heard it here folks! We’re talking about protecting the surrounding area of your BBQ and your grill side tables as well. Before, we only had the Napoleon grill mat for 500 series grills. But now with Napoleon’s grill mat for large barbecues, we get much better floor coverage. At 228.6cm by 88.9cm, this easy-to-clean and fire-resistant mat is great from protecting you floor against hot oil and grease, and even against coals and errant sparks!
