Grilled Peaches with Mint Yoghurt

Ingredients
Peaches
2 Peaches
1 tbsp Maple syrup
2 tbsp Brown sugar
1 tsp Cinnamon powder
Lemon zest
1 tbsp Maple syrup

Yoghurt sauce
1 cup Greek yoghurt
1 bunch Mint leaves
2 tsp Lemon juice
Honey to taste
1 bunch Mint leaves
2 tsp Lemon juice
Honey to taste
Garnishes
Sweet basil, thinly sliced (optional)
Method
Step 0
Half the peaches and remove the seed. Leave the skin intact.
Step 0
Marinade the peaches with the other ingredients for at least an hour.

Mince the mint leaves and mix into the greek yoghurt. Add the lemon juice and the honey to taste.

Preheat your grill on highest setting. Grill the peaches cut side down till you get a nice brown colour, about 5-6 mins.

Flip them over and place on the cooler side of the grill to slightly soften them up (if the peaches are very ripe, this step is not necessary).

Remove the skin and serve with the yoghurt. Garnish with some basil leaves.
