Pão de Queijo – Brazilian cheese bread

Ingredients

150ml Olive Oil
300ml Milk or Soy Milk
1 Tablespoon Salt
500g Tapioca Starch
125g Grated Parmesan
250g Freshly Grated Cheddar Cheese
1 Tablespoon Baking Powder
2 Eggs

Method

Step 0

Preheat oven to 375 degrees F (190 degrees C).

Step 0

Pour olive oil, milk, and salt into a large saucepan, and place over high heat. When the mixture comes to a boil, remove from heat immediately, and stir in the tapioca flour and baking powder until the mixture is smooth. Set aside to rest for 10-15 minutes.

Step 0

Stir the cheese and egg into the tapioca mixture until well combined. The mixture will be chunky like cottage cheese.

Roll ¼ cup-sized balls of the mixture and place onto an ungreased baking sheet.

Bake in preheated oven until the tops of the balls are lightly browned. 15-20 minutes.
